Some Champagne History...

The "pupitre" was invented by the Clicquot family in the early 19th century. It was designed to improve the process of removing the sediment, caused by secondary fermentation, from the bottle. Champagne cellars had large numbers of these racks, and the cellarman would turn each bottle, every day, until the sediment settled on the cork, allowing it to be removed. This process, known as "remuage" took up to 3 months, with a cellarman turning up to 30,000 bottles a day!!

It took until the end of the 20th Century for this, simple and effective design, to be replaced by new technology. Their place is now taken by metal mechanical bins that can complete the whole process in about a week.
